What exactly is 2-nonenal?
2-Nonenal is an unsaturated aldehyde. In laboratory descriptions, its odor is often characterized as greasy or grassy. The term may sound unfamiliar, but the compound has become central to discussions about what is sometimes casually called “old age smell.”
The 2001 research did not show that every person over 40 has the same odor, and it did not establish 2-nonenal as the only cause of age-related body odor. Human scent contains many volatile compounds. What it did show is that 2-nonenal can be part of the age-related shift in body odor chemistry.
